Mayonnaise is perhaps the most polarizing condiment humanity has yet to whip up. But love it or hate it, it’s an undeniable culinary marvel. Just a few basic ingredients — eggs, oil, salt, and vinegar — can be whisked together into a delicately balanced emulsion that’s held in suspension like a tightrope walker on a high wire.
In culinary school, I learned to make mayonnaise by hand with a chef instructor breathing down my neck, which was glistening with sweat. I remember his eagle eye watching over me, silently waiting to see if I whisked too much oil into the egg yolks too quickly. This would cause the precarious emulsion to break, resulting in an unappetizing mess and a major blow to my ego. But with steadfast determination and a little muscle, all of the ingredients came together to form a smooth, spreadable sauce. The chef moved on to intimidate his next pupil, and I breathed a sigh of relief.
